You’ll need to get up a bit early, to give the rolls time to rise, but the exclamations of enjoyment should make it worthwhile!

Caramel Apple Breakfast Pie
INGREDIENTS
1 package Bake and Serve Cinnamon Rolls (12), thawed but still cold
1 large granny smith apple, peeled and diced
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup graham cracker crumbs
2 tablespoons chopped pecans
Icing:
1 packet cream cheese frosting (included with cinnamon rolls)
3 tablespoons caramel ice cream topping
INSTRUCTIONS
STEP – Cut each roll into four pieces and arrange in a sprayed 12-inch deep-dish pizza pan.
STEP – Cover with sprayed plastic wrap.
STEP – Let rise 2 hours in a warm place.
Preheat oven to 350F
STEP – In a small bowl combine apple, brown sugar, cinnamon, cracker crumbs and pecans.
STEP – Remove wrap from pan and sprinkle apple mixture over the risen dough.
STEP – Bake at 350 degrees F. 20-25 minutes or until golden brown.
STEP – Combine one packet of cream cheese frosting with the caramel topping.
STEP – Drizzle over pie while still warm.

HINT – I use the low carb bread. To give it more body for french toast, I toast it in the toaster that morning, rather than let it get slightly stale.

Apple Pie French Toast
INGREDIENTS
1 loaf of white bread
6 eggs
1c milk
2T butter
3/4c apple sauce
1/3c sugar
1/3c brown sugar
2t vanilla extract
1t cinnamon
1/2t ginger
1/2t nutmeg
INSTRUCTIONS
STEP 1 – Melt the butter in a non-stick pan over medium heat.
STEP 2 – Meanwhile mix all ingredients except the bread in a large bowl.
STEP 3 – Once the butter has melted, take one piece of bread at a time and dip it into the milk, completely coating the bread (do not let it soak, it will get mushy.)
STEP 4 – Put bread into pan and let cook until underside is golden brown.
STEP 5 – Flip and cook the other side.
This should yield about 12 slices of toast. If you have extra egg mixture, pour it in the pan with your last piece of toast.
